Baking Workshop 6/19, Monday Morning

Piper grins at the students as they arrive. "We are going to make pie today, apple to be specific."

She points to the pie she made for the class. "You'll need to work with a partner. One of you will make the crust and the other will make the filling. Then you'll both work together to assemble the pie. Since there are eight of you, you should all have a partner. If anyone is absent, I'll be someone's partner."

She hands them a list of ingredients and instructions. "Have fun!"


Equipment Needed

Mixing Bowl

Rolling Pin

Knife

Measuring Spoons

Measuring Cups

Dough Blender

Cutting Board

Pie Pan


Ingredients

2 cups all-purpose flour

1 teaspoon salt

1 tablespoon sugar

6 tablespoons butter

6 tablespoons shortening

6 to 8 tablespoons ice water


Instructions

Warm butter in microwave until soft, but not melted.

Mix flour, salt and sugar in bowl.

Add butter, shortening and ice water.

Wrap pie crust in plastic wrap then place in refrigerator for 20 minutes.



Ingredients

5 peeled apples

1 cup sugar

2 tablespoons flour

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 tablespoon vinegar

2 tablespoons butter


Instructions

Peel and slice apples.

Soak them in water with a tablespoon of lemon juice. This will help prevent them from turning brown.

Mix flour, cinnamon, salt and vinegar in large mixing bowl.

Mix apples into the pie flavoring.



Instructions

Assembling the Pie

Now that your pie crust has had time to cool divide it into two equal halves.

Roll one of the balls of pie crust out until it is around 1/8 of an inch thick.

Wrap the dough around the rolling pin and unroll it onto your pie pan.

Take a fork and poke holes in the bottom of the crust to let steam out as it cooks.

Place the apples in the pie in a pattern so that they all fit in the pie.

Pour the leftover coating over them.

Place about 4 chunks of butter on top of apple filling.

Roll out the remaining pie dough and place it on top.

Create a pattern around the edge of the pie by using the back of a knife.

Baking the Pie

Cut long strips of tinfoil and place them around the edge of the pie.

Bake pie at 400 degrees for 50-60 minutes.

Take tinfoil off about ten minutes before the pie is baked to have a golden brown edge.

Anders picked up his ingredients and looked around, trying to figure out who he should work with for this. Because there were two sets of ingredients, and this might very likely be Trouble; he couldn't figure out whether it'd be safer for him to make the filling, or the crust.

"Hey, Willow!" He wasn't almost crying with relief, honest. "That'd rock. Which do you want to tackle, pie or filling? Um, not literally though."

Willow thought about it. "Well, they both sound scary, but filling has the added danger of sharp objects. So I guess it depends on which one of us is feeling swashbuckly today."

"Argh," Anders said, picking up a knife and holding a spoon in front of one eye like an eyepatch. "I have issues with making dough-type things too dry. Even with sharp things, I think I can handle peeling apples."

Willow giggled. "Okay. Then I shall brave the large and scary world of attempting to make things both tender and flakey. If this ends up killing me, make sure Amy is taken care of?"

Anders lined his apples up in a row and saluted Willow with the spoon. "Will do, but who's Amy?"

Willow started measuring out her ingredients. "My rat. If anything happens to me she should probably go back to Sunnydale. Giles will know how to take care of her."

Pip gathered his ingredients and looked around for someone competent in baking. Preferably, someone more confident than him, the captain of the one trick wonder cooking squad.

Jude collected his ingredients without dropping anything and staked out a spot with a clatter. "Hey, Maia-bra, wanna work with me?"

"Yeah." Maia said with a big smile. Relieved she would have someone to buddy up with.

"Cool," Jude grinned, and promptly knocked the box of shortening off the counter.

Seeing it would fall before Jude hit it, Maia's hand shot out and caught it before it hit the floor. "Why don't you let me um, arrange everything yeah?" She said with a smile.

"Sure," Jude agreed sheepishly, backing off a bit. "I'm not usually this clumsy." He reconsidered. "Actually, I am."

"It's ok, I've baked with you before. I'm prepared this time." She said grinning at him as she started to make sure all the ingredients were pushed back onto the counter and out of harms way.

"So d'you want to do the filling or the crust?" Jude asked, checking over the ingredients. "I can peel apples pretty good, if you want me to cover that bit . . ."

"Yeah that sounds good. I'll do the little cut outs and make the crust all pretty..." Maia said with a nod. She didn't want to admit that she was not all that comfortable with peeling things or with knives.

Sam looked around for a partner, but figured she might have some difficulty finding one.

She also wondered if she could just make the filling--the crust seemed way to intimidating, but knives she could handle.

"Do you know how to make a crust?" Stark asked uncertainly. Filling sounded so much easier. "And do you need a partner? Should have asked that first."

"Yes, I need a partner," Sam nodded, then in the interest of full disclosure said, "I'm really not good at this, though. I have no idea how to make a crust. Maybe we can just make double the filling?"

"Double the filling sounds like a good idea to me," Stark said with a nod. "But I don't think that counts as a pie. Of course, I don't know if it would count as a pie if I tried to make the crust, either."

"And I know it wouldn't count as a pie if I did," Sam eyed the crust ingredients warily. So far they didn't seem sentient, but around here? "I have flour issues."

"Flour issues?" Stark frowned at the instructions for the crust. "I can try it," he said finally. "Nothing I made has killed anyone yet. Maybe this will work."

"Crepes went very, very badly. As did the brownies. And the carrot cake." She shrugged, getting the ingredients together. "But only the crepes needed me to use the fire extinguisher."

"Hey, the worst that happens is that we peel the crust off and eat the apples, right? That's the best part anyway."
