Baking Workshop 6/19, Monday Morning

Piper grins at the students as they arrive. "We are going to make pie today, apple to be specific."

She points to the pie she made for the class. "You'll need to work with a partner. One of you will make the crust and the other will make the filling. Then you'll both work together to assemble the pie. Since there are eight of you, you should all have a partner. If anyone is absent, I'll be someone's partner."

She hands them a list of ingredients and instructions. "Have fun!"


Equipment Needed

Mixing Bowl

Rolling Pin

Knife

Measuring Spoons

Measuring Cups

Dough Blender

Cutting Board

Pie Pan


Ingredients

2 cups all-purpose flour

1 teaspoon salt

1 tablespoon sugar

6 tablespoons butter

6 tablespoons shortening

6 to 8 tablespoons ice water


Instructions

Warm butter in microwave until soft, but not melted.

Mix flour, salt and sugar in bowl.

Add butter, shortening and ice water.

Wrap pie crust in plastic wrap then place in refrigerator for 20 minutes.



Ingredients

5 peeled apples

1 cup sugar

2 tablespoons flour

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 tablespoon vinegar

2 tablespoons butter


Instructions

Peel and slice apples.

Soak them in water with a tablespoon of lemon juice. This will help prevent them from turning brown.

Mix flour, cinnamon, salt and vinegar in large mixing bowl.

Mix apples into the pie flavoring.



Instructions

Assembling the Pie

Now that your pie crust has had time to cool divide it into two equal halves.

Roll one of the balls of pie crust out until it is around 1/8 of an inch thick.

Wrap the dough around the rolling pin and unroll it onto your pie pan.

Take a fork and poke holes in the bottom of the crust to let steam out as it cooks.

Place the apples in the pie in a pattern so that they all fit in the pie.

Pour the leftover coating over them.

Place about 4 chunks of butter on top of apple filling.

Roll out the remaining pie dough and place it on top.

Create a pattern around the edge of the pie by using the back of a knife.

Baking the Pie

Cut long strips of tinfoil and place them around the edge of the pie.

Bake pie at 400 degrees for 50-60 minutes.

Take tinfoil off about ten minutes before the pie is baked to have a golden brown edge.

"Well, I've never had them do any really fancy special frosting." Anders, who had not yet noticed the change of pronouns, shrugged. "But doing it yourself, that's kind of sweet. I think he'd like that a lot."

Anders picked up a pair of wooden spoons and obligingly struck up a ragged sort of drumroll on the edge of the counter.

"Awesome!" Anders dropped the spoons and got the rolling pin and pie pan out. "Is it really supposed to do that, or is the fridge magical?"

"Honestly? I do not know," Willow admitted. She unwrapped the dough so she could get to rolling. "At this school I do not rule out a magical fridge, or the option that it contains small helpful pie gnomes that don't need to breathe."

"Do you think they have, like, cousins?" asked Anders. "Helpful crepe gnomes with really high heat resistance? Because I could've used some of those the other week."

"You never know. There could be French gnomes," Anders pointed out as he gave the apple filling one last good stirring.

If he'd known the reference, he might have made a joke involving "all for one and one for all," or something along those lines. But he didn't, so he settled for a very un-literary "Oooh, can I poke the holes in the crust?"

Anders's eyes bugged out for a fraction of a second before he decided he was just being twelve, and that was kind of silly. "Poking away, then," he declared, and got to work.

Why, no, that wasn't a Caprica Buccaneers logo in the fork-hole pattern.

Anders had the chunks of butter ready to put on top of the pie filling once it was all in the pan. "I think that's the not-so-sassy cinnamon. Now we just have to put the top on, and hope there are helpful heat-resistant oven gnomes."

"And today, that is the best invention ever," Anders replied. Okay, so his top crust wasn't perfectly even, but at least it covered the entire pie, which looked sort of like it could be a killer frisbee when it grew up, what with the tinfoil strips around the edges.

"Okay, I think we're ready to put it in now."

Willow got the oven door and used the gloves to pull out the shelf for the pie to rest on. "There you go."

Anders put the pie down gingerly. "Okay. Now, um, sit there and bake, and be a good little pie."

He straightened up and looked at Willow. "So far, pretty much so good. I think this calls for a high five."
