Baking Workshop 6/19, Monday Morning

Piper grins at the students as they arrive. "We are going to make pie today, apple to be specific."

She points to the pie she made for the class. "You'll need to work with a partner. One of you will make the crust and the other will make the filling. Then you'll both work together to assemble the pie. Since there are eight of you, you should all have a partner. If anyone is absent, I'll be someone's partner."

She hands them a list of ingredients and instructions. "Have fun!"


Equipment Needed

Mixing Bowl

Rolling Pin

Knife

Measuring Spoons

Measuring Cups

Dough Blender

Cutting Board

Pie Pan


Ingredients

2 cups all-purpose flour

1 teaspoon salt

1 tablespoon sugar

6 tablespoons butter

6 tablespoons shortening

6 to 8 tablespoons ice water


Instructions

Warm butter in microwave until soft, but not melted.

Mix flour, salt and sugar in bowl.

Add butter, shortening and ice water.

Wrap pie crust in plastic wrap then place in refrigerator for 20 minutes.



Ingredients

5 peeled apples

1 cup sugar

2 tablespoons flour

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 tablespoon vinegar

2 tablespoons butter


Instructions

Peel and slice apples.

Soak them in water with a tablespoon of lemon juice. This will help prevent them from turning brown.

Mix flour, cinnamon, salt and vinegar in large mixing bowl.

Mix apples into the pie flavoring.



Instructions

Assembling the Pie

Now that your pie crust has had time to cool divide it into two equal halves.

Roll one of the balls of pie crust out until it is around 1/8 of an inch thick.

Wrap the dough around the rolling pin and unroll it onto your pie pan.

Take a fork and poke holes in the bottom of the crust to let steam out as it cooks.

Place the apples in the pie in a pattern so that they all fit in the pie.

Pour the leftover coating over them.

Place about 4 chunks of butter on top of apple filling.

Roll out the remaining pie dough and place it on top.

Create a pattern around the edge of the pie by using the back of a knife.

Baking the Pie

Cut long strips of tinfoil and place them around the edge of the pie.

Bake pie at 400 degrees for 50-60 minutes.

Take tinfoil off about ten minutes before the pie is baked to have a golden brown edge.

Jude's teenage mind started supplying some of the pictures in those magazines Jonesy always managed to get his hands on. He quickly dragged his thoughts back to Setsuna. Er, baking. That's what he was doing. That, and trying to stop blushing.

"Sorry." Maia realized she had lost herself in a thought for a moment. Blushing furiously Maia laid the pie dough out onto the counter to start rolling it out to lay in the pan.

"Almost ready to toss it in the pan." Maia said beaming. Maybe she would make Susan a pie instead of a bunt cake.

"Groovy, bra. Filling's almost ready, too." A thought struck him. "Hey, if we have some leftover dough I wonder if we can make cinnamon rolls."

Maia looked thoughtful. "I bet we could." She smiled then "Big gooey ones."

Jude grinned. "It's somethin' my mom always does when she has extra pie crust. Ya take butter and spread it over the extra crust, and then ya sprinkle on cinnamon and sugar. They're yummy."

Maia smiled at him. "I like that. Lets do it." She was excited by the idea of making something without the guidelines. Laying the dough carefully in the pie pan she waited for Jude to pour in the filling.

"Cool." Jude hefted the bowl, briefly Atlas-posing before pouring the mixture in, in a circular pattern that evened it out. He set the bowl down and saluted. "Filling away!"

Maia laughed as he posed, carefully lifting the covering for the pie she laid it over the filling and made the careful little ridges on the side of the pie. She remembered her real mother doing this when she was a child. It was one of the only memories she had of her.

"This is gonna taste so good." Maia said happily.

"Oh man, I hope so." Jude picked up his peeling knife and held it over the pie. "Slits, bra. To let out steam." And then he cut a happy face in their pie. "Uh, that's how my mom always does it . . ."

Maia took it very carefully from him, she started to make the eyebrow, the knife poised over the raw dough when she stopped. "No, I think I like it eyebrowless." She said laying the knife down. "Shall we pop it in now?"

"Sure." Jude opened the preheated oven with an expansive gesture, stepping aside to let her slide it in. "We got much leftover dough?"

"Not much." Maia said pointing over to the small ball of dough on the counter after she had placed the pie in the oven.

"Enough for two little ones," Jude determined, quickly rolling it out. About a minute later, there were two small cinnamon rolls sitting on the counter. He snagged another pie pan, placed them in the exact centre, and then slid it into the oven next to the pie.

Maia smiled, kneeling down she flipped on the oven light to watch the pie and the cinnamon rolls cook.

Jude knelt beside her, breathing in deeply. "Mmm . . . I love baking, y'know?" He chuckled. "Not too manly, I know, but true."

"I'm liking it more and more." Maia said almost gleefully. "I like to watch it when it bakes."

"Yeah." Jude watched, keeping an eye on the cinnamon rolls, and pulled them out earlier than the pie, poking them with the knife to check if they were ready. He held out the pan in the ovenmitt.

"Go ahead and grab one, bra."

Maia carefully placed it on a plate and grabbed a fork. Taking a piece of it she blew on it before putting it into her mouth. "Oh wow, this is good. I like this." She said happily as she took another bite.

"Awesome," Jude replied. Only it was more like "Awhhhm", because by this point he had pulled his out of the pan and popped it in his mouth whole.
