Baking Workshop 6/19, Monday Morning

Piper grins at the students as they arrive. "We are going to make pie today, apple to be specific."

She points to the pie she made for the class. "You'll need to work with a partner. One of you will make the crust and the other will make the filling. Then you'll both work together to assemble the pie. Since there are eight of you, you should all have a partner. If anyone is absent, I'll be someone's partner."

She hands them a list of ingredients and instructions. "Have fun!"


Equipment Needed

Mixing Bowl

Rolling Pin

Knife

Measuring Spoons

Measuring Cups

Dough Blender

Cutting Board

Pie Pan


Ingredients

2 cups all-purpose flour

1 teaspoon salt

1 tablespoon sugar

6 tablespoons butter

6 tablespoons shortening

6 to 8 tablespoons ice water


Instructions

Warm butter in microwave until soft, but not melted.

Mix flour, salt and sugar in bowl.

Add butter, shortening and ice water.

Wrap pie crust in plastic wrap then place in refrigerator for 20 minutes.



Ingredients

5 peeled apples

1 cup sugar

2 tablespoons flour

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 tablespoon vinegar

2 tablespoons butter


Instructions

Peel and slice apples.

Soak them in water with a tablespoon of lemon juice. This will help prevent them from turning brown.

Mix flour, cinnamon, salt and vinegar in large mixing bowl.

Mix apples into the pie flavoring.



Instructions

Assembling the Pie

Now that your pie crust has had time to cool divide it into two equal halves.

Roll one of the balls of pie crust out until it is around 1/8 of an inch thick.

Wrap the dough around the rolling pin and unroll it onto your pie pan.

Take a fork and poke holes in the bottom of the crust to let steam out as it cooks.

Place the apples in the pie in a pattern so that they all fit in the pie.

Pour the leftover coating over them.

Place about 4 chunks of butter on top of apple filling.

Roll out the remaining pie dough and place it on top.

Create a pattern around the edge of the pie by using the back of a knife.

Baking the Pie

Cut long strips of tinfoil and place them around the edge of the pie.

Bake pie at 400 degrees for 50-60 minutes.

Take tinfoil off about ten minutes before the pie is baked to have a golden brown edge.

"Back to Sunnydale, got it. Special kind of rat?" Anders asked as he picked up the first apple and started peeling it. Since he was using a knife instead of a vegetable peeler he was taking chunks of apple along with the skin, and he scowled. "No. I refuse to be defeated by any wily little apple."

"Oh no!" Willow said at once. "Just a ratty kind of rat. Nothing special at all."

Willow glanced in Piper's direction, then back at Anders. "Think she'd notice if I used a food processor?"

"Oh, okay," Anders said dubiously as he started on the second apple. "So is Giles sort of an expert with rats or something then?"

He looked down at the directions and shot a glance of his own in Piper's direction. "Well, there's nothing in here that says we shouldn't. Maybe you'd even get extra credit for disaster-free food processor use."

"Also? No butter all over my hands," Willow said. She shot another look at Piper then said, "Cover me, I'm going in."

She grinned. "I always wanted to say that."

Anders picked up the next unpeeled apple, tossed it in the air, and caught it with a loud smack. "Move out, I've got your back." He looked over his shoulder and grinned back. "I always wanted to say that too."

Willow grinned. Acting far more sneaky and stealthy than was probably necessary, she crept her way over to a food processor and added her pie crust ingredients in.

She may have also been humming the theme song to a show about a group of people that performed jobs - missions if you will - that seemed unlikely to succeed.

Anders was juggling the last two unpeeled apples and probably overdoing it in the "providing a distraction" department. He might also have been whistling the music from the chase scene in one of those Bund movies.

Unfortunately he had to peel them eventually and get around to the slicing, so he settled for just whistling extra loudly.

Willow snuck back with a bowl full of dough that currently looked like sand. "I did it! I think. This doesn't look very pie like. Maybe it'll be better after it's cold?"

Anders hadn't gotten the lemon juice in on time, so his rather uneven apple chunks (calling them slices would be generous) had turned a little bit brown.

"It's supposed to go in the fridge for twenty minutes, right?" he asked, mixing the dry ingredients and vinegar in another bowl. "There has to -- whew! Vinegar! There's gotta be a reason for that. Like I'm assuming this vinegar smell will go away after baking."

Willow wrapped up the dough in plastic wrap and put it in the fridge, setting the timer for 20 minutes. "What's the vinegar for? We're not making salad."

"I know," Anders said worriedly, stirring the mostly dry mixture. "But it was in the instructions. I'm assuming there's a reason. Maybe it's to keep the cinnamon from getting too sassy?"

"We can't have sassy cinnamon," Willow agreed. "Oh! Maybe the person who made this recipe was told it had to be made with piss and vinegar and they totally missed the metaphor and just went for the less disgusting of the two ingredients?"

"Maybe that's when they started using lemon juice," Willow said. She hopped up to sit on the counter, getting flour on the back of her pants. "Hey, Anders, you're a guy, right?"

"Let's say a girl who shall remain nameless wanted to do something nice for a guy who shall also remain nameless," Willow said. "But she did not want to be totally over the top and make him run screaming for the hills because she likes him and also has issues about guys doing that to her. Any suggestions?"

"Well," Anders said, "did Mystery Girl tell you what sort of stuff she had in mind? Because I don't tend to run for the hills until there are jokes about what the kids will look like, so I might not be the best person to ask about this."

He scratched his nose and thought for a moment, then added, "But I don't think you can ever really go wrong with cupcakes. They're pretty safe."

"Oooh, cake." Anders grinned widely. "Cake is always good. There could be jumping out of -- okay, no, not that. No, seriously, people are always sharing cookies and stuff around here, right?"

He didn't mention his own tendencies toward being a cupcake-pusher. "Tell her to have some personal message written on it in icing, and it's special and safe at the same time."

"Well, I've never had them do any really fancy special frosting." Anders, who had not yet noticed the change of pronouns, shrugged. "But doing it yourself, that's kind of sweet. I think he'd like that a lot."
