Hey, she was nervous and uncomfortable. Which clearly meant that he was going to have to be as reassuring as possible. That would make her feel better, right?

Because honestly, what was she supposed to say? Forgive her? Don't be too mad? Don't kick her out of class or deliberately fail her?
Yeah, none of those would work.
So, instead she just clasped her hands in front of her chest and bowed. She didn't bow as deeply as she otherwise would, but only because she wasn't sure if that would make Mr. Starsmore more uncomfortable.
"I--I owe you a very, very deep apology," she said softly. "Only made worse by how long it took me to deliver it. I--I--I'm the one..." Ugh, why was this so hard to say?!
Oh. Right. Because she was telling someone she respected that she had stolen one of his most treasured possessions. That would do it.
She should have straightened up by now, but at least this way? She didn't have to see his expression when she confessed. Didn't have to see his disappointment and anger.
"I so very, very sorry!" she said. "I took it and I had no right and I'm sorry!"
