Pie for Beginners - Monday 2nd period - Week 2

The class met the same place it did last time and each table this time had all the ingredients and supplies for making their own crust, as well as a mysterious box marked; "Open only in case of emergency".

"Good morning everyone! We're continuing to work with pie crusts because they are the most important, and most difficult element of the pie. It's a pretty basic part of pie, and adding small ingredients like more salt for a savory pie, or more sugar for a sweet, can make all the difference. There are different kinds of crusts as well other than the one that was demonstrated in the film, such as a graham cracker or saltine cracker crust. Last week, the film focused on the basics of crust making for the traditional kind of crust and at your stations there are the supplies to make it, as well as instructions from the show. If you mess up on your crust don't worry. There are boxes at each of your stations that will help if you do. Try not to use the words 'tender'." A puppet suddenly appeared and smacked him in the head. "....or 'flakey'," Arashi winced as one appeared on the otherside, then both promptly disappeared. "The Danger Shop seemed to think last weeks video was rather hilarious. Work with a partner, follow the instructions hand waving the part about refrigerating the dough, have fun, try not to burn the place down or get punched out by the puppets."

Maybe he should have included instructions on the ovens....? Nah.

[Plz wait for ocd ETA: The "Emergency Box" contains a pre-made pie crust if you mess up.]

"Yeah, I know, and that's kinda saying something in this place. And I think maybe it's pre-frozen?" Pam replied, poking at the butter and lard to see if they were cold. "Why do you think we have to have it cold?"

"I have no idea," Will said, scrunching up her forehead a little. "Why do we need to freeze if the whole thing's going to get baked anyway? I'd say that it's cold enough as it is."

"Okay, then we combine flour and salt and combine?" she guessed, looking around for the food processor. She actually knew what that looked like, happily enough. "And...okay, pulse. That's a weird way to put that. Little bursts, I guess?"

Will had never heard that term before. "I guess so, like in a Lub-Dub, Lub-Dub thing. Or maybe faster? Does it say if it's supposed to be a resting pulse or a fast pulse or what?"

"...no? Maybe a resting pulse?" Pam guessed. "'Cause it doesn't say if the food processor should be, um, post-workout or anything."

Will let out a giggle. "Maybe what pulse to use really depends on what you plan todo before eating the pie." She smiled at Pam. "But you're probably right. Wanna be the one to work the food processor?"

"I can do that!" Pam said, pleased that someone was trusting her with equipment-type thingies. She carefully tipped flour and salt into the processor, and pressed the button in a "lub-lub" way a few times. "...ew, we're supposed to add the butter and pulse it till it looks mealy now. Mealy's not a yummy adjective."

Will read over the recipe again. "And then once it gets mealy, we're supposed to add lard. This is going to be one nasty looking recipe for a bit."
