Baking Workshop 7/31, Monday Morning

Piper smiles as the students arrive. "Good morning. You're going to be making apple pie today. I was kind of sick this weekend so I didn't get a chance to make one for you. There are muffins from J,GOB, though. Feel free to take some."

She hands them a list of instructions. "Once again, there are a lot of instructions here, so feel free to work with a partner if you'd like. One of you can make the crust while the other makes the filling. And then you both can work together to assemble the pie. Ask questions if you have any."


Equipment Needed

Mixing Bowl

Rolling Pin

Knife

Measuring Spoons

Measuring Cups

Dough Blender

Cutting Board

Pie Pan


Ingredients

2 cups all-purpose flour

I teaspoon salt

1 tablespoon sugar

6 tablespoons butter

6 tablespoons shortening

6 to 8 tablespoons ice water


Instructions

Warm butter in microwave until soft, but not melted.

Mix flour, salt and sugar in bowl.

Add butter, shortening and ice water.

Wrap pie crust in plastic wrap then place in refrigerator for 20 minutes.



Ingredients

5 peeled apples

1 cup sugar

2 tablespoons flour

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 tablespoon vinegar

2 tablespoons butter


Instructions

Peel and slice apples.

Soak them in water with a tablespoon of lemon juice. This will help prevent them from turning brown.

Mix flour, cinnamon, salt and vinegar in large mixing bowl.

Mix apples into the pie flavoring.



Instructions

Assembling the Pie

Now that your pie crust has had time to cool divide it into two equal halves.

Roll one of the balls of pie crust out until it is around 1/8 of an inch thick.

Wrap the dough around the rolling pin and unroll it onto your pie pan.

Take a fork and poke holes in the bottom of the crust to let steam out as it cooks.

Place the apples in the pie in a pattern so that they all fit in the pie.

Pour the leftover coating over them.

Place about 4 chunks of butter on top of apple filling. This will give the filling and crust a more buttery flavor.

Roll out the remaining pie dough and place it on top.

Create a pattern around the edge of the pie by using the back of a knife.

Baking the Pie

Cut long strips of tinfoil and place them around the edge of the pie.

Bake pie at 400 degrees for 50-60 minutes.

Take tinfoil off about ten minutes before the pie is baked to have a golden brown edge.

Bel scowled at the slightly unevenly flatted piece of dough. "It's done as it's gonna be," he said.

"It'll work fine," Cally said. She grabbed Bel's dough and laid it out in the pan and made sure it was properly forked.

"You tell Phoebe about the thing yet?"

"Well, up until the last name, I woulda given you a fair shot at all of them being trustworthy," Cally said. "Would you like to top?" Cally asked, pointing at the other bit of dough.

"Most of the time, but not in this case. Sure," Bel said. He placed the top of the crust on top of the pie and pressed the edges together. "Think it's got enough filling?"

Cally peered. "I think if she takes anything bigger, it might not fit," she said. "Perfect size, I say."

"There is such a thing as too big," Cally said, wrapping the foil around the edges of the crust. "Don't forget to preheat the oven," she said. "Gotta make sure it's ready for us to shove this big fella in there."

"Do not ask for whom the bell tolls, for it may toll for Bel?" she chuckled and offered an oven mitt to him. "Would you care to do the honors of sticking it in?"

"And you do it very well," Cally said. "Now we just have to remember to take it out," Cally said, setting the timer. "Hopefully we'll get the time right, and we won't have to, like, take it out, and back in, then back out, and in again or anything."
