Baking Workshop 7/31, Monday Morning

Piper smiles as the students arrive. "Good morning. You're going to be making apple pie today. I was kind of sick this weekend so I didn't get a chance to make one for you. There are muffins from J,GOB, though. Feel free to take some."

She hands them a list of instructions. "Once again, there are a lot of instructions here, so feel free to work with a partner if you'd like. One of you can make the crust while the other makes the filling. And then you both can work together to assemble the pie. Ask questions if you have any."


Equipment Needed

Mixing Bowl

Rolling Pin

Knife

Measuring Spoons

Measuring Cups

Dough Blender

Cutting Board

Pie Pan


Ingredients

2 cups all-purpose flour

I teaspoon salt

1 tablespoon sugar

6 tablespoons butter

6 tablespoons shortening

6 to 8 tablespoons ice water


Instructions

Warm butter in microwave until soft, but not melted.

Mix flour, salt and sugar in bowl.

Add butter, shortening and ice water.

Wrap pie crust in plastic wrap then place in refrigerator for 20 minutes.



Ingredients

5 peeled apples

1 cup sugar

2 tablespoons flour

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 tablespoon vinegar

2 tablespoons butter


Instructions

Peel and slice apples.

Soak them in water with a tablespoon of lemon juice. This will help prevent them from turning brown.

Mix flour, cinnamon, salt and vinegar in large mixing bowl.

Mix apples into the pie flavoring.



Instructions

Assembling the Pie

Now that your pie crust has had time to cool divide it into two equal halves.

Roll one of the balls of pie crust out until it is around 1/8 of an inch thick.

Wrap the dough around the rolling pin and unroll it onto your pie pan.

Take a fork and poke holes in the bottom of the crust to let steam out as it cooks.

Place the apples in the pie in a pattern so that they all fit in the pie.

Pour the leftover coating over them.

Place about 4 chunks of butter on top of apple filling. This will give the filling and crust a more buttery flavor.

Roll out the remaining pie dough and place it on top.

Create a pattern around the edge of the pie by using the back of a knife.

Baking the Pie

Cut long strips of tinfoil and place them around the edge of the pie.

Bake pie at 400 degrees for 50-60 minutes.

Take tinfoil off about ten minutes before the pie is baked to have a golden brown edge.

"Hi Molly," Angela said. "I'd love a partner. The recipe's not hard, but it's kind of long." She gestured to her bowl. "I had measured the stuff for the crust already."

"I can start on the apples then," Molly said and got a bowl of water and lemon juice ready before she started peeling and cutting.

"I don't think I've said welcome back yet. How was your vacation?"

Angela patted the dough for the crust into shape as she talked, adding cold water a bit at a time. "Really good," she said. "Tahiti's gorgeous, and it was nice to see my family and Angel again. But by the end, I was kind of ready to be back here, you know? I think this is home now."

Molly grinned. "I know what you mean," she said as she watched Angela shape the dough. "I'm starting to feel the same way. Have you done this before?" she asked, indicating the dough.

"Tiny bit?" Angela said, rolling the dugh into a ball. "My dad's a really good cook -- he runs a restaurant now -- so I've helped him basically my whole life. But he's not really a dessert person."

She glanced at the applies. "What about you?"

Molly shook her head as she started peeling the third apple. "Nope. I've watched some cooking shows when there was nothing else good on TV, but I never baked myself before this class." She grinned at Angela. "Except for a small problem with forgetting to add liquid to replace the coffee last week, I think I've done okay. Everything except the cake has been edible anyway."

"My brownies came out really mushy because I put in too much butter," Angela confessed. "But the cake was pretty good. I mean, if you like the taste of coffee."

She patted the dough again. "I guess now this goes into the fridge, huh?"

"You want to mix up the flavoring stuff for the apples?" Molly asked. "I've got my apple cutting rhythm going. It shouldn't take me long to finish." She looked into the bowl of water. "Most of my slices are even uniform," she added with a grin.

Molly read over the instructions. "I'm going to say yes because otherwise there isn't enough stuff to go over all of these apples," she said.

"It's had it's ups and down, but it's mostly been really good," Molly said. "I've been having fun in all of my workshops and I really liked the cabins. I wish we could have stayed there all summer."

Molly made a face. "Yeah, I think those demon guys kind of ruined everyone's desire to prank each other. Although, I wasn't really upset that nothing happened. We ended up with ducks in our cabin the first time." She rolled her eyes.

"I would never trust a cabin named after a gross insect," Angela said philosophically. "Meerkats are fuzzy and cute, and at least pangolins are mammals."

Molly and Angela chatted about various things until the dough was ready. Then they assembled their pie and baked it according to the instructions. It turned out successfully. Yay pie!
