Beginning Gourmet Cooking Techniques | Tuesday, 1st Period

The class was meeting at Portalocity again, this time to head out to a local butcher's shop.

"Now that we've discussed how to cut meat, we will go over the various types of meat you may encounter," Hannibal said once they were gathered. "Different cuts are useful for different things. The flavor and texture of meat on an animal varies depending upon where it comes from, as well as owing much to genetics and the way in which it's raised.

"I have arranged for the butchers to show you the various cuts of beef, pork, and lamb, and where on the carcass they come from. We'll then be bringing a number of cuts back with us, and I will demonstrate the different ways each of them cooks. You may count this all as a bit of early holiday, as we're unlikely to have time for you each to cook today as well." He knew that would come as a relief to some of them. "I would rather you pay close attention to the similarities and differences in the meat."

Cuts of beef
Cuts of pork
Cuts of lamb

Things you will not learn but might wonder

Before the students left, Hannibal spoke up. "One more thing, not entirely related to the class. Miss Blythe," he nodded at Rilla, "Ms Baker says that you are going home for the break, and I have promised her we will do what we can in the way of donations of things for your boys and for your pledge drives."

He looked around at the students. "If any of you would like to help, I'm sure it would be much appreciated. If you have any goods to contribute, you may bring them by my office. Also, in lieu of office hours on Thursday, I'll be setting aside some further time in here. I hope to see some of you."

Flick didn't really have any questions but he did watch. His mind was clear and didn't wander for the most part. He examined the slabs of meat for differences in the cut and made mental notes.

"For the most part," Hannibal confirmed. "There are some differences in what the cuts are called, of course, even accounting for language, and where the lines between cuts are drawn. And some of it depends upon the type of cow, naturally."

Nothing particularly fancy this time; he just wants you to see how different cuts affect things like cooking time and flavor. He'll be grilling bits and passing them out.

See, this his favorite type of class. All he had to do was watch silently and he'd get to eat some good food. Flick approved.

Well, "not fancy" is all relative. It was still probably something of a show, and it was still excellent meat. Hannibal was glad some people were enjoying it.

Sparkle was paying keen attention this week, too, though not quite the same way he had been last week.

Picking up useful life skills was part of the reason Lewis had sent him here. to some degree, Sparkle was starting to appreciate why.

Isabelle had watched the cutting with rapt interest. She had less of that for the cooking part of the class.

But the meat was still yummy.

Billy was definitely mesmerized watching the cooking happening. He would never have imagined meat could be prepared so many different ways.

"So, hey," Sparkle approached Hannibal after class, hands in his pockets, looking like he was in one of those playing-it-too-damn-cool-to-be-awkward places, again. "Thanks again for Saturday. I mean, I would've dealt with the weekend, but that was... You know. Way better."

Sparkle was pretty sure he could handle butcher shop work, if it wasn't for that meat smell always being in your clothes and how much dead animal matter must end up accumulating under your fingernails.

Sparkle's fingernails were actually pretty fastidiously groomed, thanks. People might notice the hair first, but raggy nails were what drove him nuts.
