Healthy Diet and Living; Wednesday, Period One [ 06/24 ].

"Well," said Daisy, at the start of class, where she had a smile with her and a whole lot of fruit, "it's our last meeting and before we get started on anything I have to thank the five of you for being such a good," mostly, "class. This whole teaching bit was new to me, and I don't feel any more insane coming out of it than I did going in, so I'll take that as a good sign. So today, after we've shared your recipes, I've found my own to share, for chocolate cupcake. Yes. For breakfast. But they're low fat and if you're going to make some, you've got to have plenty of fruit here to go with it. I'll call it meeting you half-way, for having such a good workshop."

"So, then, let's to it. Share your recipe if you brought on in, and then help yourself to make some cupcakes or some smoothies or just have some fruit, and, again, thanks for being a good class you guys. It was definitely...interesting."

Alex grabbed an apple, pulled out the recipe he'd found and idly listened to the short lecture. Healthy food or not, it was always nice to get free food first thing in the morning.

Alex was proud of himself for both finding a pizza recipe that was healthy and still pizza. "White pizza (http://www.foodnetwork.com/recipes/rachael-ray/white-pizza-recipe/index.html)," he said. "There's cheese, garlic, basil and other stuff on a pizza crust. You miss the tomato sauce and other things but it's still pizza."

Maron grinned. "Watermelon Summer Salad (http://allrecipes.com/Recipe/Watermelon-Summer-Salad/Detail.aspx)," she said brightly, "which is both pretty healthy, and rather appropriate time-wise. It's a bit weird, because it's got red onion, watermelon, mint, and olives in it," which was rather interesting, she thought, for a salad, "but super tasty!"

She nodded. "It's just when you're starting out that it's a problem because you're doing such a big change that you trip over all the things you can't eat and wind up feeling like there's nothing to pick at all!"

"I brought in a recipe for a breakfast sandwich (http://www.foodnetwork.com/recipes/ellie-krieger/healthy-breakfast-sandwich-recipe/index.html) because I normally eat Ho Ho's in the morning," she explained, smiling. "I did in fact try this recipe and it is surprisingly good." She just wasn't sure she'd quit eating her Ho Ho's.

"I brought in a chocolate cake recipe," Claudia said proudly. "It has peanut butter (http://www.foodandwine.com/recipes/molten-chocolate-cake-with-peanut-butter-filling) so that makes it healthy!"

Alex didn't really feel up to cooking so he sliced another apple and added some (healthy) peanut butter to the slices. Peanut butter made everything better.
