How to Survive Your Own Cooking [Class 3]

"Today, we are going to be looking at pasta," Lulu began, as she leaned against the desk at the front of the home ec room. "There are many ways to eat pasta; most involve some form of sauce." She moved to her demonstration table, taking out a knife, a bulb of garlic, and an onion. "Pretty much any of them will require at least one, if not both, of these, so I'm going to start by showing you how to prepare them."

She demonstrated first, how to peel and mince a clove of garlic. "The thing to remember is that the clove is only one of these little pieces," she added. "The whole is called a bulb. Be careful you don't use a bulb when it calls only for a clove." She also diced the onion, doing it slowly enough that those unfamiliar with a knife should see how she did it.

"At your stations," she said, moving away from the table and washing her hands, "you will see three recipes. You get to choose only from two of them; the third is there only for your reference. You have the choice between the alfredo and the tomato sauce, as the pasta aglio e olio is a little bit too easy, I think, even for this class." She grinned, taking away any sting that might have accompanied the words. "I will add: if you are making the tomato sauce, start cooking the pasta around the time you add the vegetables, so that they'll be ready at as close to the same time as possible.

"Everything you need is at your stations. Pair up -- with a new partner, just as last week -- and begin."

Jenny dumped a handful of salt in the water, which wasn't quite boiling yet, then stopped staring at it because you know what they say about watched pots. "I like onion, too. It has its place."

Jenny nodded and thanked whatever higher power might be listening she'd been born rich and, once the money was gone, she was Jenny sodding Sparks. She'd never been shy for food, even if she had subsisted on liquor and cigs for most of the eighties. "Water's boilin'," she observed. "Time to drop the noodles. D'you see any fettuccine?"

"Here we go," Jenny said, holding up the box. She dumped the noodles in the water and told Liir, "You have thirteen minutes to get your sauce on."

And he was. The butter was in the pan, as was the garlic and the rest were making their way in as the recipe said.
