"Good morning," Piper greets as the students arrive. "Today, you're going to make cheesecake. I brought a sample as well as muffins. Take whatever you want."

"I'd like each of you to bring a recipe of your choice next week. That's what you'll be making," she continues. "Try not to use a recipe that requires open flames."

She hands them a list of ingredients and instructions. "As always, I'm around if you have questions."

Springform Pan

Mixer

Knife

Crust Ingredients

1 1/4 cups graham cracker crumbs

1/4 cup butter, melted

2 tablespoons sugar

Filling Ingredients

3 packages cream cheese, softened

3/4 cup sugar

3 eggs

2 cups sour cream

2 teaspoons vanilla

Topping Ingredients

2 tablespoons sugar

1 teaspoon vanilla

Instructions

Heat oven to 325°F.

Combine all crust ingredients in medium bowl.

Press onto bottom and 1-inch up sides of ungreased 9-inch springform pan.

Bake for 10 to 12 minutes or until golden brown. Cool.

Combine cream cheese and sugar in large bowl.

Beat at medium speed, scraping bowl often, until creamy.

Gradually add eggs, one at a time, beating well after each addition.

Reduce speed to low; add 1/2 cup sour cream and 2 teaspoons vanilla. Beat until well mixed.

Pour cream cheese mixture into baked crust.

Bake for 80 minutes or until set 2 inches from edge of pan.

Meanwhile, combine remaining sour cream, 2 tablespoons sugar and 1 teaspoon vanilla in small bowl.

Evenly spread over top of hot cheesecake.

Continue baking for 7 minutes.

Loosen sides of cheesecake from pan by running knife around inside of pan; remove sides of pan.

Cool completely (about 2 hours).

Leave uncovered until completely cooled. Store refrigerated.

Bel measured the butter and put it in a porcelain container so he could melt it in his hand without fear of the container melting. Voila, melted butter.

"Whoa, nice," Cally said, emptying the crumbs into a bowl. "So, what's this about a party tommorow night?"

"Ever tried sake?" Bel asked. "It's a Japanese wine. Good stuff. Enough people were pouting that I didn't bring any back with me so I decided to have a little party."

"Nope, can't say I've tried it," Cally said. "I'm totally there."

"Excellent," Bel said. "Know any fun drinking games?"

"Ummmm," Cally said, starting to mix the crust ingredients. "Nope. Last game I played while drinking was, uhhh, Strip Triad."

Bel began to measure some of the cheesecake ingredients to have them ready. "Hmm, I think we'll avoid that, unless I want my girlfriend to vanquish me," he said. "Then again, maybe she'd go for that."

[ooc: JUST now got this comment. Stupid LJ.]

"Well, I don't have a proper deck of cards for it," Cally said. "And I'm not sure if asking Anders for his so I can play Strip Triad is a great idea."

"There's always spin the bottle," Bel snickered. "Or truth or dare."

"Yeah, you can totally count me in," Cally said. She eyed the ingedients for the mix. "Sour cream? Seriously?"

"Cool," Bel said. "And, yeah, I was wondering about that myself. Why would you want sour cream in a sweet dessert?"

"I dunno," Cally said. "Maybe it's there for consistency or counteracting all the cream cheese or. . . magic or something."

"Could be magic," Bel said. "This is Piper's recipe, after all."

"Wouldn't want to question Piper's magical sour cream," Cally said. "So we'll just go with it."

"It could explode in our faces if we leave it out," Bel said gravely.

"And I got gooed on enough yesterday," Cally said. "So in it goes."

"What happened yesterday?" Bel asked. "Or do I not want to know?"

"My Viper was objecting to being stripped for parts," Cally said.

"And it...spewed on you?" Bel said.

"Waste coolant to the face," Cally said with a nod. "Okay, did we remember to put the crust in the oven?"

"I've suddenly lost my appetite," Bel said. He looked at the counter. "Uh, we forgot?"

"Oops," Cally said, quickly putting the crust actually into the oven.

"Waste coolant makes you lose your appetite?"

"I don't find anything associated with 'waste' to be particularly appetizing," Bel said.

[ooc: I scurry home now. Back in an hour or so.]

"Yeah, and you're not the one who got it up the nose. . ." Cally trailed off and blinked.

"Great, now I've lost my appetite too."

"I'm sure it'll be back by the time we finish our sour but delicious cheesecake," Bel said.
