Baking Workshop 8/14, Monday Morning

"Good morning," Piper greets as the students arrive. "Today, you're going to make cheesecake. I brought a sample as well as muffins. Take whatever you want."

"I'd like each of you to bring a recipe of your choice next week. That's what you'll be making," she continues. "Try not to use a recipe that requires open flames."

She hands them a list of ingredients and instructions. "As always, I'm around if you have questions."


Equipment Needed

Measuring Cups

Measuring Spoons

Bowls

Springform Pan

Mixer

Knife


Crust Ingredients

1 1/4 cups graham cracker crumbs

1/4 cup butter, melted

2 tablespoons sugar


Filling Ingredients

3 packages cream cheese, softened

3/4 cup sugar

3 eggs

2 cups sour cream

2 teaspoons vanilla


Topping Ingredients

2 tablespoons sugar

1 teaspoon vanilla


Instructions

Heat oven to 325°F.

Combine all crust ingredients in medium bowl.

Press onto bottom and 1-inch up sides of ungreased 9-inch springform pan.

Bake for 10 to 12 minutes or until golden brown. Cool.

Combine cream cheese and sugar in large bowl.

Beat at medium speed, scraping bowl often, until creamy.

Gradually add eggs, one at a time, beating well after each addition.

Reduce speed to low; add 1/2 cup sour cream and 2 teaspoons vanilla. Beat until well mixed.

Pour cream cheese mixture into baked crust.

Bake for 80 minutes or until set 2 inches from edge of pan.

Meanwhile, combine remaining sour cream, 2 tablespoons sugar and 1 teaspoon vanilla in small bowl.

Evenly spread over top of hot cheesecake.

Continue baking for 7 minutes.

Loosen sides of cheesecake from pan by running knife around inside of pan; remove sides of pan.

Cool completely (about 2 hours).

Leave uncovered until completely cooled. Store refrigerated.

"I wasn't feeling well, so I mostly just stayed in my room. But I'm better now," Marie said, gathering the ingredients for the filling. "How about you?"

"Quiet for me, too," Angela said, starting to pat the crust into the pan. "Mostly just hung out." She smiled. "It's always kind of a weird relief when we get a boring weekend here."

Marie giggled as she started mixing ingredients. "I can't believe that I didn't believe people's warnings when I got here."

"At least you giot warnings," Angela said. "When we got here last fall? We got to find out about gremlins and everything all by ourselves." She moved to turn on the oven.

"Wow, that would definitely be worse," Marie agreed. "But you stayed, so I guess that says something about the school."

"I stayed," Angela agreed, tucking hair behind her ear. "I had a boyfriend, and ... stuff started to make sense."

"Yeah, I am," Marie said. "It's weird, but I can't imagine going home now. Knowing that magic and aliens and everything is real? Kind of makes living in small town Mississippi a lot different."

"Well, it turns out that there are mutants in my dimension," Marie admitted. "But where I'm from, they're, um, treated pretty badly."

"That's sad," Angela said, frowning. "Like, they throw them in jail, or what? It's not like they can help it."

Marie bit her lip. "They're really mean," she said haltingly. "When I was home a few weeks ago, they ran a girl out of the town next to mine."

Angela shivered. "Just for having powers?" she said. "I guess people have a hard time with what they can't understand, but... awful."

"Yeah, it was pretty ugly. Made me see a lot of people I know in a different light," Marie shuddered slightly.

"Anyway, I think we're ready to assemble this and put it in the oven."

Angea opened the oven, waiting for Marie to put the pan in. "Piper's recipes are usually pretty good."

Marie slid the pan in and started the timer.

"Yeah, they are," she agreed. "Of course, I like to bake, so I don't have as much trouble as some people seem to."
