Potatoes!, Friday, Second Period
"Okay, so it's the wrong Jewish holiday this week," Raiden acknowledged, "but it is a Jewish holiday, and that's thematically appropriate to this week's delicious potato recipe: latkes!...even though one of the ingredients is wrong for the holiday that it actually is." Raiden frowned at the recipe, then shrugged. "To make it more compliant you could use matzo meal, but like I said: it's the wrong holiday, and this kitchen hasn't been kashered anyway, so we're just going with it.
"The latke is a potato pancake, typically made with shredded potatoes and onions, fried in oil and traditionally served during the Jewish holiday of Hannukah, which is usually in December so we won't get there during this class. But when it does come around, you can make and then eat latkes! And remember, you can always use storebought shredded potatoes for a shortcut. No one will stop you. Now, let's get started."
Raiden walked the students through how to make latkes, and when they were done, he told them, "Latkes are traditionally served with sour cream and applesauce, and sometimes smoked salmon, but the sky is really the limit for toppings, so we have a bunch ofmoddable options to choose from. Help yourselves!
While they did so, Raiden went on to tell them, "You can also make latkes out of all sorts of other vegetables, and even fruit! Sweet potato latkes are great, of course, but you can use zucchini or even apples for a dessert-y option. The latke, like the potato itself, is a very versatile medium. Does anyone have any questions?"
