Beginning Gourmet Cooking Techniques | Tuesday, per. 2
"We have quite a bit to do today, so I will begin quickly," Hannibal said, "but I hope you won't mind. There is quite a bit to learn if you intend to work with gelatin."
He would pause here for the squeals of delight if needed.
"We will begin with something fairly forgiving, for gelatin - marshmallows."
Did he need to pause again?
"But there are still quite a few techniques to cover in order to make them. Dissolving the gelatin, cooking a candy mixture to a specific temperature, and carefully mixing different substances. Once we've completed all of that, they will have to sit for several hours in order to gel, so you will have to take them with you and cut them later. I will demonstrate that as well."
He went over the recipe carefully, and had several flavors of extract and colors to work with. His were lavender and honey, with a subtle light purple swirl pattern in them. He'd made hot chocolate to go with them.
"Any questions?"
