Beginning Gourmet Cooking Techniques | Friday, 3rd period

"Good afternoon." Hannibal nodded at the students. There were candles burning cheerfully around the Danger Shop, on counters and in corners and stuck with their own drippings to the ventilation hoods. Hannibal had given up trying to remove them. Still, at least your teacher wasn't possessed this week, right?

"I missed a few of you last week," he started, "and while I understand the reasons, you unfortunately missed an important lesson. Any of you that would prefer are welcome to schedule a time with me to make it up. If you do so, I will also have you complete a small exercise to demonstrate your understanding of it, and add those points to your final grade.

"Until then, this is your exam." He gestured at the shop's setup, which included both computer stations and functional kitchens. "You will find at each station a wide variety of meats, produce, spices, and other materials. I want you each to cook a meal. It should have at least three dishes and include at least one drink.

"The more you use of what you've learned this semester, the higher your score. You will get points for presentation, difficulty, number of dishes, how well the parts of the meal fit together, creativity, and proper cooking technique." Almost like a real class! Or a cooking contest.

"You may use whatever resources you like, including each other, the Internet, and me. But do keep in mind your time is limited."

He smiled "Any questions?"

Well, as it turned out she was planning on visiting her father and making him dinner this weekend, so was Cosette above using this class as a practice run?

No.

The trick with managing her father was always to try to get him to eat a good meal without him protesting that it was too extravagant, and while she had plenty of experience in persuading him she always felt bad about that after a while.

Therefore, the challenge was to come up with some really flavorful dishes that didn't look like they were too fancy, which meant that she had to rule out the shrimp recipe she'd been eyeing with interest. In the end, she went with herb-crusted lamb chops, a maple-glazed salmon fillet, and a broiled flatiron steak with some steamed vegetables and plain rice on the side.

God only knew how she'd ended up deciding on horchata for the drink, but after tasting it she decided it had been a good idea.

Hannibal nodded at her meal. "Simple, but flavorful for the most part." He eyed the plain rice and lack of ornamentation. "Perhaps a bit ascetic in places. Although not in the drink." The horchata was definitely a welcome stretch.

"Well done overall, mademoiselle. My one suggestion given your current menu would be to place the rice under the meat - it will soak up a bit of the juices and gain some of its flavor. Alternately, you could use a recipe that makes it stickier, and mold it into shapes."

If you really had to do something so plain.

Elsa was one of those who had missed last week's class, unfortunately, and so she was looking at least somewhat chagrined as she approached Hannibal.

"Excuse me, Doctor Lecter? You had mentioned something about a make-up lesson for last week's class? I was lost in the woods peeling branches off of trees at the time, I'm afraid."

That would have been a weak excuse anywhere but here.

Anywhere but here, Hannibal wouldn't have spent the class period arguing with Bob about proper presentation, either.

"So I heard, and thank you for that." Hannibal nodded to her and took out his calendar. "If you'd like to make it up an hour or two before dinner one day, we can eat the fruits of our labor after."

He paused. "Actually, I wrote to Mr. Ween (http://notaweenie.livejournal.com/657.html?thread=512657#t512657) earlier today asking to meet with him. If the pair of you would prefer to coordinate your times, you could come together."

Because Hannibal had no designs on children that way, but a future queen might be extra conscious of propriety.

As somebody who attempted to make carbonara yesterday using alphabet pasta and without benefit of oil, bacon, parsley, or garlic, I feel you.

Ah, my kinda bland cheese-alphabet omelet...
