Beginning Gourmet Cooking Techniques | Tuesday, 1st Period
Hannibal was not best pleased. He was doing his best to stay pleasant, but he had a suit upstairs in his office with chocolate stains all over it, and his hair was still wet from being washed in the sink. At least he'd learned to keep spare clothing here.
"Today is your final exam," he said with no preamble. "I hope you can all guess what that will be." The kitchen stations around the room and the computers in between them might be a hint. "There are a wide variety of meats, produce, spices, and other materials in the refrigerators. I want you each to cook a meal. At least three dishes and a drink to go with it.
"The more you use of what you've learned this semester, the higher your score. You will also get points for presentation, difficulty, number of dishes, how well the parts of the meal go together, creativity, and proper technique." Think of it as an Olympic skating event.
"You may use whatever resources you like, including each other, the Internet, and me. But keep in mind your time is limited.
"Any questions?" He nodded and waved them at their stations.

Listen to the lecture, ask questions
Research, cook your food
Re: Research, cook your food
He got started on an appetizer first, going for something small and that didn't need to cook long.

She couldn't cook an entire roast or turkey in the time they'd alloted, so she made a turkey breast with whipped potatoes, roasted carrots and parsnips (parsnips were very daring to her way of thinking), and pie.
Well, tiny pies. A full pie would just be a giant oven hog and she had other things to cook, too.
She picked a wine rather blindly: white went with poultry, right?
Re: Research, cook your food
He was especially fond of the red meats today. It was a venting-with-bloody-chunks-of-cow kind of final exam.
And, yeah, there were veggies and dairy thrown in there for good measure, too. Because... He wanted to pass, mostly. He actually spent a bit of time before class today looking to see what was in season and brushing up on what was fresh.
Sparkle actually took this class seriously. Huh.
Present your final/talk to Hannibal!
Re: Present your final/talk to Hannibal!
The pie crust had refused to co-operate.
"And white wine," she tacked on, "which he wouldn't have approved of, but it's a festive occasion."
Re: Present your final/talk to Hannibal!
"I probably would have chosen a drier wine," he advised, "but this is a passable choice. The rest of it goes together quite nicely. As you've probably also learned, I prefer more adventurous and intricate dishes, but doing simple things well can be every bit as difficult. I also congratulate you on your ability to think on your feet." He nodded at the cake; he'd seen her struggling with the pie crust.
"Thank you, Rilla; nicely done." He gave her a small smile. "Though I do hope if you continue taking my classes, I may be able to tempt you to branch into new flavors."
Don't worry, Rilla; people flavors were only for really advanced cooks.
