Anyone Can Cook | Period 4 | 10.27

"Welcome back, class," Colette said. "It is a bit late for a midterm, but I will give one anyhow, and hope you will indulge me." They had better - this was for a grade.

"Ideally, as a chef, you will have full access to the best of everything! But sometimes you cannot. Some people love animals and do not eat them. Some people cannot physically tolerate wheat, or nuts, or dairy. Some people diet and will say, 'oh no, no fat, none for me!' even in a French restaurasnt." She sounded a little contemptuous of these people. "And then there are some people with religious limitations on what they can and cannot eat."

She spent some time explaining vegetarian, gluten-free, Kosher and low-fat cooking, then reached for a sheet of paper on her desk. "This week, I would like for you to get into teams and plan a meal -- a main dish, side dish, and dessert or appetizer -- that will follow the dietary restrictions of the group you are assigned to. You do not need to cook anything, though you can if you would like, bien sur."

"Emma, Sam, and Kyle, you are cooking for vegetarians. Sookie, George and Jean, you are the gluten-free group. Joan, Liir, Helen, you must plan a Kosher meal -- dairy or meat. Chuck, Kate and Priestly, that leaves you to cook low-fat. Give me your meal plans before the end of class."

"Begin. You have cookbooks that you can use for ideas, and I am here if you need help."

Emma wasn't so much taking notes or paying more than minimal attention today, since she hadn't exactly slept. Still, she was there, and at least trying.

Right. One meal. That couldn't be that hard, right?

Red Pepper & Mushroom Quesadillas, since Felicia used to make those for Emma all the time as a kid, and she could always make them in the mircowave if needed. Tossed greens salad with avocado and lime juice, and frozen peach "cream" for dessert. Voila. Something even Emma could cook without needing a fire extinguisher.

"I think we got one of the easiest ones," Sam said. "There's a ton of options for vegetarians out there." He didn't know how well he'd be able to help make anything, but he hadn't set the classroom on fire yet this term, so that had to be a good sign.

Kate was leafing through cookbooks, but she was feeling a little uninspired today. She was pretty sure this meant that Priestly would end up doing all the work for their team.

Yes, Chuck, that's exactly how helpful she thinks you'll be.

Priestly looked over his notes on low-fat diets with a sigh. "Man, vegetarian would have been so easy, too."

Kate made noise of vague agreement. It was cooking, after all; it was more or less difficult for her. "Tastier, at least. Any brilliant ideas?"

"Olive oil." Priestly nodded. "Way more heart healthy than butter or other oils, but it still has some flavor."

"Well, to be honest, some of the rules listed here make a lot of sense when you don't have certain technologies. Some of the things prohibited are dangerous.

"Otherwise? I don't know."

Helen shook her head. "Not at all." She quietly went about collecting them, head down, hair in her eyes, and silently set them out where they'd be easy to access.
