Anyone Can Cook | Period 4 | 9.29

"Bonjour class," Colette greeted as usual, shutting the door behind her precisely on time. She passed out a handout with recipes attached before beginning her lecture.

"I understand some of you may have guests this weekend; I will of course be in my office to meet them. This week, we will talk about sauces, which make the difference between something mommy might make at home in the microwave and true cuisine. We will talk of the five mother sauces, which were first identified by Antonin CarĂªme in the 18th century and redefined by Auguste Escoffier about a hundred years ago."

A pause. "They were, of course, both French."

She turned to write on the board at the front of the room as she continued to talk.

"The sauce groups are brown -- demi-glace -- sauces based on brown stock, such as Chasseur, Chateaubriand, Diane, Estragon, Lyonnaise, and Madeira; veloute sauces made with light stock and roux -- roux is cooked flour and butter -- bechamels, which are veloutes with milk instead of stock; red sauces, such as marinara sauce, salsa and ketchup; and emulsified sauces, such as mayonnaise or Hollondaise."

"Watch while I make a roux, and then you will have your turn to make the sauces of your choice and taste them on the toast, pasta and chicken I've already prepared. I would ask you wear aprons this week, even if you normally do not."

She skillfully cooked butter and flour into a blond roux, then grinned at the class. "That is how it is done. Begin."

Kate listened, took notes, and watched Colette cook. And wondered whether it would be a smart move to shove her mother at Colette during the weekend. Chef Tatou was pretty normal, right?

He listened and nodded along and watched her with the same kind of enjoyment football fans had for watching masters of their sport.

Sam was so grateful that Ms. Tatou went to the board. French was just one of those languages that he'd never been able to learn very well, let alone spell.

Helen decided that the Madeira sauce sounded delicious and began pulling ingredients to make it.

She would be very happy to have someone work with her.

Kate chose a bechamel. The cooking went well, apart from the part where she spilled some on herself.

Man, was she glad she was wearing an apron.

Liir decided to start with the mayonnaise, since it was one he was well familiar with making since childhood. He worked the egg carefully, adding the oil in the smallest increments to keep it the right consistency. In the end, it came out rather well, he thought.

The bechamel was a little easier, but no less enjoyable. He wondered privately if they'd be allowed to take home some of their work for use in other things, considering. Especially as he was very pleased with the bechamel.

Sam stuck with the red sauces, marinara to be specific. He'd have to be careful not to get any on himself, but it was a little easier than some of the others and he knew he'd like how it tasted in the end. Assuming it came out right.

Homemade mayonnaise? So much better. I haven't made it in ages, but while I'm normally not terribly fond of it, I have this one recipe for mayonnaise that is divine.
